Step 1
Season the 1 lb chicken breast with salt and pepper. Heat 1 tbsp olive oil in a grill pan or skillet over medium-high heat. Cook the chicken until golden and cooked through, about 6-7 minutes per side. Let rest, then slice.
Step 2
While the chicken cooks, slice the 2 bell peppers and 1 onion into strips. Heat the remaining 1 tbsp olive oil in a separate skillet over medium heat. Cook the peppers and onion until soft and lightly charred, about 8 minutes.
Step 3
Warm the 1 can black beans (drained and rinsed) in a small pot over medium heat, stirring occasionally, until hot, about 5 minutes.
Step 4
Divide the cooked peppers and onions between two bowls. Top with the sliced chicken, black beans, 1 cup guacamole, and 1 cup salsa.
Step 5
Scatter 2 cups tortilla chips over the bowls and serve immediately.
