Instructions

  1. Step 1

    Thinly slice the 1 lb pork tenderloin into 1/4 inch strips. In a bowl, mix the 2 tbsp soy sauce and 1 tbsp honey, then toss the pork to coat. Let marinate for 10 minutes.

    While pork marinates, peel and julienne the 1 large carrot and 1 medium daikon. Toss with the 3 tbsp rice vinegar and a pinch of salt. Set aside to quick-pickle.

  3. Step 3

    Heat a grill or grill pan over medium-high. Cook the pork strips in a single layer, about 2-3 minutes per side, until charred at the edges and cooked through.

  4. Step 4

    Slice the 1 baguette lengthwise, leaving one side attached. Toast the cut sides on the grill for 1-2 minutes until golden and crisp.

  5. Step 5

    Spread the pickled carrot and daikon along the bottom of the baguette. Layer the grilled pork on top, then add the 1 cup cilantro leaves.

  6. Step 6

    Drizzle any remaining marinade or extra soy sauce over the filling. Close the sandwich, press gently, and slice into 2-4 portions before serving.

    Serve warm, with extra pickled vegetables or chili sauce on the side if you like.
