Step 1
Slice the 2 onions thinly and mince the 3 garlic cloves. Cut the 2 tomatoes into small dice. Chop the 1/4 cup parsley leaves.
Step 2
Cut the 1 lb potatoes into 1/2-inch wedges. Toss with 1 tbsp olive oil, salt and pepper. Roast at 425°F on a baking sheet until golden and tender, about 25 minutes.
Step 3
While potatoes roast, heat 1 tbsp olive oil in a skillet over medium. Add the sliced onions and cook, stirring often, until soft and golden, about 10 minutes. Stir in the minced garlic and diced tomatoes; cook until tomatoes break down, about 5 minutes. Season with salt and pepper.
Step 4
Pat the 1.5 lb steak dry and season generously with salt and pepper. Heat a grill or grill pan over high heat. Cook the steak to your desired doneness, about 4-5 minutes per side for medium-rare, until nicely charred.
Step 5
Let the steak rest for 5 minutes, then slice thinly against the grain. Serve the steak with the onion-tomato sauce spooned over, the roasted potatoes on the side, and a sprinkle of chopped parsley.

If you like a bit of heat, add a pinch of red pepper flakes or a splash of vinegar to the sauce while it cooks.
