Instructions

  1. Step 1

    Bring 4 cups of the beef broth to a gentle simmer in a large pot, then stir in 1 tbsp of the soy sauce.

  2. Step 2

    In a wide skillet, combine the remaining 1 cup broth with 3 tbsp soy sauce, 3 tbsp mirin and the sliced onion.

  3. Step 3

    Simmer over medium until the onion is soft and translucent, about 5 minutes; add a pinch of red pepper flakes or grated ginger if you have them.

  4. Step 4

    Lay the 12 oz beef slices over the onions in a single layer and simmer until browned with no pink left, 3 to 4 minutes.

  5. Step 5

    Drop the 9 oz ramen noodles into the simmering soup pot and cook until springy and just tender, 2 to 4 minutes.

  6. Step 6

    Divide all the noodles between 2 deep bowls and ladle the hot broth over each.

  7. Step 7

    Top with the beef and onions, spoon 2 to 3 tbsp of the pan juices over and scatter on the 2 sliced green onions.
