Step 1
Cook the 4 bacon slices in a skillet over medium heat until crispy, about 6 minutes. Drain on paper towels and crumble.
Step 2
In a small bowl, mix the 4 oz cream cheese, 1 cup shredded cheddar, 2 minced jalapeños, and 2 tbsp sliced green onions until well combined.
Step 3
Spread the cream cheese mixture evenly on 4 slices of bread. Top with the crumbled bacon and remaining 1 cup cheddar. Close with the remaining 4 bread slices.
Step 4
Melt 2 tbsp butter in a large skillet over medium heat. Place 2 sandwiches in the skillet and cook until golden brown, about 3 minutes per side.
Step 5
Add the remaining 2 tbsp butter to the skillet and cook the other 2 sandwiches the same way, until golden and the cheese is melted.
Step 6
Slice the sandwiches in half and serve hot, with extra jalapeños or hot sauce if desired.
