Step 1
Soak the 1 cup bulgur in hot water for 10 minutes, then drain well and squeeze out excess moisture.
Step 2
In a bowl, mix the soaked bulgur, 1 lb ground beef, 1 grated onion, 1 tsp allspice, and 1 tsp salt until well combined.

Shape the mixture into 12 oval meatballs, pressing firmly so they hold together.

Bake the meatballs on a greased baking sheet at 400°F for 20-25 minutes, until browned and cooked through.

While they bake, grate the 1 medium beetroot and toss with juice of half the lemon and a pinch of salt.

Stir the remaining lemon juice into the 1 cup yogurt to make the sauce.
