Instructions

  1. Step 1

    In a bowl, mix 1 cup flour, 1/4 tsp baking soda, 1/2 tsp salt, and 1 tbsp oil. Add water gradually to form a stiff dough. Cover and rest for 15 minutes.

  2. Step 2

    Divide dough into 8 balls. Roll each into a small disc. Heat oil for deep frying over medium heat. Fry discs until golden and puffed, about 4-5 minutes per batch. Drain on paper towels.

  3. Step 3

    In a small bowl, whisk 1 cup yogurt with 1/4 tsp salt and 1/4 cup water until smooth. Set aside.

  4. Step 4

    Chop 1 onion and 1 tomato finely. Gently poke a hole in each fried ball and fill with the onion and tomato mixture.

  5. Step 5

    Place filled balls on a plate. Drizzle generously with the yogurt sauce. Sprinkle with 1 tsp red chili flakes and top with fresh coriander and pomegranate seeds if you have them.

    Serve immediately, garnished with an orange slice if desired.
