Step 1
Pound or finely chop the 4 garlic cloves and 4 Thai chilies together into a rough paste.
Step 2
Heat 2 tbsp vegetable oil in a wok or large skillet over high heat until shimmering. Add the garlic-chili paste and stir-fry until fragrant, about 30 seconds.
Step 3
Add 1 lb ground pork and break it up with a spatula. Cook, stirring frequently, until the pork is no longer pink and starts to brown, about 5-7 minutes.
Step 4
Stir in 2 tbsp soy sauce, 1 tbsp oyster sauce, and 1 tsp sugar. Cook for 1 minute, letting the sauce coat the pork.
Step 5
Turn off the heat and fold in 2 cups holy basil leaves until they just wilt, about 30 seconds. Serve immediately over steamed rice.
Step 6
Taste and adjust seasoning with extra soy sauce or sugar if you like. Add more chilies for extra heat.
