Step 1
Pour 1.5 cups almond milk into a mason jar or small container with a tight lid.
Step 2
Add 0.5 cup chia seeds, 2 tablespoons maple syrup, and 0.5 teaspoon vanilla extract to the milk.
Step 3
Screw the lid onto the jar tightly, then shake vigorously for 30 seconds until the chia seeds are evenly distributed and no clumps remain.
Step 4
Place the jar in the refrigerator and leave it undisturbed for at least 8 hours or overnight, until the mixture thickens to a spoonable pudding texture.
Step 5
Remove the jar from the refrigerator and give it a quick stir or shake to loosen it, then spoon into a bowl.
Step 6
Top with 0.75 cup fresh berries or sliced banana, then eat immediately or cover and refrigerate for up to 5 days.
