Step 1
In a small bowl, sprinkle the 1 tbsp gelatin over the 2 tbsp cold water. Let stand for 5 minutes until spongy.
Step 2
In a saucepan, combine the 2 cups cream, 0.5 cup milk, and 0.33 cup sugar. Heat over medium, stirring, until sugar dissolves and mixture is hot but not boiling, about 5 minutes.
Step 3
Remove from heat and stir in the 1 tsp vanilla and the softened gelatin until completely dissolved, about 1 minute.
Step 4
Pour the mixture into 4 ramekins or glasses. Refrigerate until set, at least 4 hours or overnight.
Step 5
To serve, top each panna cotta with 0.25 cup granola and 0.25 cup berries. Serve chilled.
