Step 1
Preheat oven to 400°F. Slice potatoes into 1/4-inch rounds. Toss with 1 tbsp olive oil, 0.5 tsp salt, and 0.25 tsp pepper.
Step 2
Cook 6 oz bacon in a 9-inch oven-safe skillet over medium heat until crispy, about 6-8 minutes. Remove bacon, leaving 1 tbsp drippings in skillet.
Step 3
Add 1 sliced onion to skillet and cook until soft and golden, about 5 minutes. Stir in potatoes and cook, stirring occasionally, until slightly browned, about 8 minutes.
Step 4
Crumble bacon over potatoes and stir to combine. Sprinkle 1 cup shredded Gruyère evenly over the top.
Step 5
Transfer skillet to oven and bake until cheese is melted and bubbly and potatoes are tender, about 15-20 minutes. Let rest 5 minutes before serving.
Step 6
Optional: sprinkle with fresh herbs like thyme or chives before serving if you have them.
