Step 1
Pat pork dry. Chop apples and onion into 1-inch chunks. Toss with 1 tbsp olive oil, salt, and pepper on a sheet pan.
Step 2
Heat 1 tbsp olive oil in a skillet over medium-high until it shimmers. Sear pork 2 minutes per side until golden.
Step 3
Transfer seared pork to the sheet pan. Scatter apples and onions around it. Sprinkle thyme over everything.
Step 4
Roast at 400°F for 10–12 minutes until pork reaches 145°F at the center (use a meat thermometer).
Step 5
Whisk vinegar and mustard together. Drizzle over the pork and vegetables. Rest 2 minutes.
Step 6
Slice pork and serve with roasted apples and onions. Spoon pan juices over the top.
