Step 1
Preheat the oven to 425°F and cut the 2 lb russet potatoes into 0.5 inch-thick sticks.
Step 2
Toss the fries with 2 tbsp vegetable oil and 0.5 tsp salt, then spread them in a single layer on a sheet pan.
Step 3
Bake the fries 25-30 minutes, flipping once, until golden and crisp at the edges.
Step 4
Pat the 1.5 lb steaks dry and season all over with 1 tsp salt and 0.5 tsp pepper.
Step 5
Sear the steaks in a very hot skillet with the remaining 1 tbsp oil, 3-4 minutes per side, until deeply browned.
Step 6
Add the 2 tbsp butter and spoon it over the steaks for 1 minute, then rest 5 minutes until the juices settle.
Step 7
Slice the steak against the grain and serve with the hot fries, with arugula alongside if you like.
