Step 1
Set the oven to 425°F and wait until the indicator light or beep tells you it has finished heating, about 10 minutes.
Step 2
Pat the pork ribs dry with paper towels, pressing gently all over both sides to remove surface moisture.
Step 3
In a small bowl, whisk together the ketchup, rice vinegar, honey, soy sauce, and minced garlic until smooth and uniform.

Place the ribs meat-side up on a sheet pan lined with foil, spacing them apart so they lie flat without overlapping.

Pour half of the sweet and sour sauce over the top of the ribs, then use a pastry brush or the back of a spoon to spread it evenly across all surfaces, especially the meat side.

Slide the pan into the 425°F oven and roast for 12 minutes, until the edges of the sauce look darker and bubbly.

Remove the pan from the oven using oven mitts, then pour the remaining sauce over the ribs and brush to coat evenly.
Step 8
Return the pan to the oven and roast for 6 more minutes, until the glaze is caramelized and sticky and the ribs are cooked through.
Step 9
Remove the pan from the oven and let the ribs rest on the sheet pan for 2 minutes before serving, allowing the glaze to set slightly.
