Apple-Lemon Cottage Cheese Cookies
Soft cottage cheese cookies with fresh apple, lemon zest, and a light cinnamon-sugar coating. The cottage cheese keeps the centers tender and moist, while the apple adds natural sweetness and texture. They’re lightly crisp on the outside and soft inside.

Step 1
Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
Step 2
Make the wet mixture. In a large mixing bowl, combine the cottage cheese, egg, sugar, salt, and melted coconut oil. Mix until well combined.
Step 3
Add the fruit. Finely dice the apple and add it to the mixture along with the lemon zest and juice of half a lemon. Stir to combine.
Step 4
Make the dough. Gradually add the flour and baking soda while mixing. Continue until a soft, workable dough forms. Avoid adding substantially more flour unless the dough is too wet to shape.
Step 5
Divide the dough into 16 approximately equal portions and roll each portion into a ball.
Step 6
Coat the cookies. Combine a little granulated sugar and cinnamon in a shallow bowl. Lightly dip or roll each dough ball in the cinnamon-sugar mixture.
Step 7
Arrange the cookies on the prepared baking sheet, leaving some space between them.
Step 8
Bake for 20–25 minutes at 350°F (180°C), until the cookies are cooked through and lightly golden.
Step 9
Allow them to cool for several minutes before serving.
