Charred Grilled Cabbage
Wedges of cabbage hit the grill hard and fast, blackening at the edges while the inside stays tender and sweet. That char is the entire point — smoky, slightly sweet, and dangerously easy.

Step 1
Heat grill to medium-high (about 400°F) or preheat a grill pan over medium-high heat.
Step 2
Cut cabbage into 4 wedges, keeping the core intact so each wedge stays together.
Step 3
Brush both sides of each wedge generously with olive oil and sprinkle with salt.
Step 4
Place wedges cut-side down on the grill and cook without moving until deeply charred, 4–5 minutes.
Step 5
Flip wedges and char the other cut side for another 3–4 minutes until edges blacken.
Step 6
Transfer to a plate and serve immediately; the char crisps up as it cools.
