Step 1
Pulse fava beans, parsley, onion, flour, cumin, 0.5 tsp salt, and 0.25 tsp pepper in a food processor until coarse crumbles form—do not puree.
Step 2
Scoop into 8 balls, then flatten each into a 2-inch patty. Rest on a plate while oil heats.
Step 3
Heat oil in a skillet over medium-high until a small piece of mixture sizzles immediately when dropped in, ~2 minutes.
Step 4
Fry patties 2 minutes per side without moving until golden brown and crispy on both edges.
Step 5
Transfer to paper towels to drain. Season with a pinch of salt.
Step 6
Serve hot, preferably in a pita or with tahini sauce for dipping.
