Step 1
In a medium bowl, combine 1 cup heavy cream, 2 tbsp powdered sugar, and 1 tsp vanilla extract. Beat with a hand mixer until stiff peaks form, about 3-4 minutes.
Step 2
Spoon or pipe the whipped cream into the 12 mini tart shells, filling each about three-quarters full.
Step 3
Peel and slice 1 kiwi into thin rounds, then cut each round in half. Peel 0.5 mango and slice into thin strips. Peel 1 orange and separate into segments, removing any seeds.
Step 4
Arrange the kiwi, mango, and orange segments on top of the cream in a decorative pattern, then scatter 0.5 cup blueberries over the fruit.
Step 5
Chill the tartlets for at least 15 minutes before serving to let the cream set. Serve cold.
