Step 1
Pat the 1 whole fish dry with paper towels. Score the skin 3 times on each side and rub with salt and pepper. Let sit while you make the sauces.

In a small bowl, mix juice of 1 lime, 2 tbsp fish sauce, 1 tsp sugar, and 1 tsp chili flakes for the spicy sauce. In another bowl, mix juice of 1 lime, 1 tbsp fish sauce, 1 tsp sugar, and 1 minced garlic clove for the sweet sauce.
Step 3
Preheat grill to medium-high. Grill the fish for 6-8 minutes per side, until the skin is charred and the flesh flakes easily with a fork.
Step 4
While the fish cooks, slice the 1 cucumber into rounds and pick leaves from the 0.5 cup cilantro. Arrange on a platter with lime wedges from the remaining lime.
Step 5
Transfer the grilled fish to the platter. Serve with both dipping sauces on the side. Squeeze extra lime over the fish before eating.
