Step 1
Preheat your grill to medium-high heat (about 400°F). Pat the 1 whole snapper dry with paper towels and score both sides with shallow cuts.
Step 2
In a small bowl, mix 2 tbsp olive oil, 2 minced garlic cloves, 1/2 tsp salt, and 1/4 tsp black pepper. Rub this mixture all over the fish, inside and out.
Step 3
Toss the 2 cups mixed vegetables with the remaining 1 tbsp olive oil, 1/4 tsp salt, and 1/4 tsp black pepper. Place them in a grill basket or on a sheet of foil.

Grill the fish directly on the grate for 6-8 minutes per side, until the skin is charred and the flesh flakes easily with a fork. Grill the vegetables alongside, turning occasionally, until tender and charred, about 8-10 minutes.
Step 5
While the fish cooks, make the sauce: in a small bowl, combine the juice of 1 lime, the remaining 2 minced garlic cloves, and 1/2 cup chopped cilantro. Stir in a pinch of salt.
Step 6
Transfer the grilled fish and vegetables to a platter. Drizzle the sauce over the fish and vegetables, and serve with extra lime wedges if desired.

Let the fish rest for 5 minutes before serving to allow the juices to settle.
