Soak bamboo skewers in water for 30 minutes to prevent burning.
Step 2
In a bowl, combine coconut milk, fish sauce, palm sugar, garlic, coriander, and turmeric. Add pork cubes and marinate for at least 15 minutes.

Thread marinated pork onto skewers, leaving small gaps between pieces.

Whisk together peanut butter, coconut milk, fish sauce, lime juice, palm sugar, chili paste, and garlic in a saucepan over medium-low heat.

Simmer for 5 minutes, stirring occasionally, until sauce is smooth and creamy. Add water if too thick.

Heat a charcoal grill or grill pan to medium-high heat. Grill satay skewers for 3-4 minutes per side until pork is cooked through and lightly charred.
Step 7
Arrange satay on a platter with cucumber and red onion slices. Drizzle peanut sauce over satay or serve on the side.
Step 8
Garnish with fresh cilantro and serve with lime wedges.
