In a large bowl, combine flour, yeast, and salt. Make a well in the center and add warm water and olive oil.

Preheat oven to 450°F. Divide dough into 4 equal portions and roll each into a thin oval about 0.25 inches thick.

Place on parchment-lined baking sheets. Spread za'atar mixture generously over each manakish, leaving edges bare.

Bake for 12-15 minutes until golden brown and crispy.

Remove from oven and let cool for 2 minutes. Serve warm, optionally with extra lemon wedges and fresh vegetables.
