Step 1
Cut the 1.5 lb chicken thighs into bite-sized pieces. In a bowl, mix 1 cup flour, 0.5 cup cornstarch, 1 tsp salt, and 0.5 tsp black pepper.
Step 2
In another bowl, whisk 1 egg with 0.5 cup water. Dip chicken pieces into the egg mixture, then coat thoroughly with the flour mixture.
Step 3
Heat 1 inch of oil in a deep skillet to 350°F. Fry chicken in batches without crowding, turning occasionally, until golden and cooked through, about 6-8 minutes. Drain on paper towels.
Step 4
In a small saucepan, combine 0.5 cup chili sauce and 2 tbsp honey. Warm over low heat, stirring, until hot and slightly thickened, about 2-3 minutes.
Step 5
Toss the fried chicken in the warm chili sauce until evenly coated. Serve immediately with sliced cucumber and lettuce leaves on the side.
