Step 1
Slice the 2 onions into thin rings. Heat 1/4 cup of the vegetable oil in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until golden and crispy, about 15 minutes. Remove with a slotted spoon and set aside.
Step 2
While onions cook, pat the 1.5 lb fish fillets dry. Season both sides with the 1 tsp salt and 1/2 tsp black pepper.
Step 3
Place the 1/2 cup flour in a shallow dish. Beat the 2 eggs in another shallow dish. Dip each fish fillet in the flour, then the egg, coating evenly.
Step 4
In the same skillet, add the remaining 1/4 cup oil and heat over medium-high. Fry the fish in a single layer (work in batches if needed) until golden and cooked through, about 3-4 minutes per side. The fish should flake easily with a fork.
Step 5
Transfer the fried fish to a plate. Top with the crispy onions and sprinkle with the 1/4 cup chopped fresh parsley. Serve hot.
