Combine scotch bonnet, thyme, scallions, and allspice in blender.

Add lime juice, soy sauce, garlic, and ginger to blender.

Blend until smooth paste forms, about 1 minute.

Pat pork shoulder dry with paper towels.

Rub jerk paste all over pork, working into scores.

Cover pork and refrigerate for at least 4 hours.

Remove pork from refrigerator 30 minutes before cooking.

Remove pork from oven and let rest 15 minutes.

Shred pork with two forks, discarding bones.
