Steps

  1. 1In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, ginger, garlic, and sriracha.
  2. 2Cut sushi-grade salmon into bite-sized cubes and place in a separate bowl.
  3. 3Pour marinade over salmon and toss gently to coat. Refrigerate for 10 minutes.

Why this works

Sushi rice is deliberately lean. It is seasoned with vinegar, sugar and salt but almost no fat, which is what makes it feel clean and lets the topping dominate. That leaves a gap, and avocado fills it precisely: it supplies the richness and mouth-coating quality that a bowl of rice and raw fish otherwise lacks, without any of the heaviness that oil or mayonnaise would add.

The seasoning of the rice is also what makes avocado taste right in the bowl rather than bland. Avocado is fatty and low in acid, and fat without acid is dull. The rice vinegar in seasoned sushi rice does exactly what lime does in guacamole — it cuts the fat and makes it read as fresh rather than heavy. This is why plain steamed rice with avocado is a far less interesting dish than seasoned rice with avocado.

Texture is the other half of it. Rice grains are distinct and slightly resistant; avocado is smooth and yielding. Cutting the avocado into slices or cubes rather than mashing it keeps that contrast intact, which is why poke bowls and sushi rolls almost never use it as a purée.

One practical rule: add the avocado at the very end and never to hot rice. Warmth turns it soft and dull, and the cut surfaces brown quickly. Slice it just before serving, and if the rice is still warm, let it cool to around body temperature first. Does the rice need to be seasoned?

It makes a large difference. Rice vinegar, sugar and salt stirred through warm cooked rice give it the acidity that avocado fat needs to taste fresh rather than flat. Plain steamed rice with avocado is edible but noticeably dull, and no topping quite makes up for it.

What rice should I use for a poke bowl?

Japanese short-grain or a good sushi rice, because the grains cling together enough to eat with chopsticks while staying distinct. Medium-grain works at a push. Long-grain basmati is the wrong texture entirely — it stays too separate and does not carry the seasoning as well.

Should the rice be warm or cold?

Body temperature or slightly below. Hot rice softens avocado into mush and dulls raw fish; fridge-cold rice turns hard and loses its aroma. Season the rice while it is warm, then let it cool on a tray to room temperature before you build the bowl.
