  • pork chops (bone-in or boneless, about 1 inch thick)
  • potatoes (russet or Yukon gold, halved)
  • broccoli florets

Steps

  1. 1Heat oven to 425°F and line a sheet pan with foil.
  2. 2Pat pork chops dry, season with salt and pepper, then place on the sheet pan.
  3. 3Toss potatoes and broccoli with 2 tbsp olive oil, salt, and pepper; spread around the chops.
  4. 4Roast until pork reaches 145°F internal temp and potatoes are golden, about 18–20 minutes.

Why this works

Pork is one of the few proteins that supplies its own cooking fat in useful quantity, and potato is one of the few vegetables that can absorb a lot of it without turning greasy. That exchange is the whole basis of this pairing. Render bacon or pork belly in a cold pan and within a few minutes you have a shallow layer of clean, savoury fat; add sliced or diced potato and the starch soaks it up while the surface dries out and browns.

Browning is the point. Potato starch and the small amount of sugar in the tuber react under heat to produce the crisp, deeply flavoured crust of a hash or a roast potato, and pork fat has a high enough smoke point to get there without burning. Butter cannot; neutral oil can but tastes of nothing on the way. This is why Tyrolean hash, farmer breakfast skillets and German bratkartoffeln all specify pork fat rather than oil.

The pairing also solves a seasoning problem. Potato is bland and needs a lot of salt. Cured pork — bacon, speck, pancetta — is essentially a salt delivery system with smoke and savoury depth attached, so it seasons the potato as it cooks rather than requiring you to correct at the end. In warm German potato salad the same logic runs through the dressing: hot bacon fat and vinegar poured over still-warm potatoes, which absorb far more of it than cold ones would.

With a whole chop rather than cured pork the timing changes, because potatoes need considerably longer than a pork chop. Do I need to parboil the potatoes first?

For roasting, it helps — a few minutes in boiling water gelatinises the outer starch, and roughing up the surface afterwards gives you far more crisp area. For a hash or skillet, skip it: slice thinly and cook slower so the inside softens while the outside browns in the rendered fat.

What cut of pork works best with potatoes?

Bacon, speck or pancetta if you want the pork to season the potatoes, because cured pork renders freely and carries salt and smoke. Chops or belly if you want the pork to be the centrepiece. Either way, render the fatty cuts before the potatoes go in so they cook in that fat.

Why do my potatoes go soggy instead of crisp?

Usually crowding or moisture. Potatoes release steam as they cook, and if the pan is packed that steam has nowhere to go, so they braise rather than fry. Dry the cut potatoes on a towel, use a wide pan, spread them in a single layer, and leave them alone until one side has browned.
