  • rotisserie chicken, shredded
  • red enchilada sauce
  • corn tortillas
  • sharp cheddar cheese, shredded
  • diced green chiles (canned)
  • Mexican crema or sour cream

Steps

  1. 1Heat oven to 400°F. Spread 1/2 cup enchilada sauce in a 10-inch cast iron skillet or 2-qt baking dish.
  2. 2Toss shredded chicken with remaining sauce, green chiles, and crema in a bowl until combined.
  3. 3Layer 4 tortillas over sauce, overlapping. Spread half the chicken mixture over tortillas.

Why this works

Sour cream is not decoration on a plate of Mexican-influenced food; it is doing specific chemical work. Capsaicin, the compound responsible for chili heat, is fat-soluble and does not wash away with water. Milk fat dissolves it, and casein — the main protein in dairy — actively lifts it off the receptors it is binding to. That is why a spoonful of sour cream dampens chili heat almost instantly while a glass of water does nothing.

Acidity is the second half of the job. Most tortilla dishes involve fat somewhere: fried tortillas in a flauta or tostada, melted cheese in an enchilada, rendered meat in a taco. Sour cream is tangy enough to cut through all of it and reset the palate between bites. Mexican crema is thinner and less sour than American-style sour cream, which is why it can be drizzled straight from a spoon, and why recipes calling for crema often suggest loosening sour cream with a little lime juice or milk.

The practical rule is heat. Sour cream is a relatively low-fat, high-protein dairy product, and its proteins curdle when boiled. In an enchilada sauce it goes in off the heat, or at the very end, or it is stabilised with a little starch. Spoon it over a hot skillet rather than stirring it into a simmering pan.
