What Can I Make with Cheddar Cheese and Sour Cream?

Why this works
These two are both dairy, but they are used for opposite purposes and they are almost never cooked together. Cheddar goes on hot and melts; sour cream goes on cold and stays cold. The contrast between them — molten and salty against cool and sharp — is the entire appeal of a loaded potato or a plate of nachos, and it is why removing either one makes the dish noticeably worse.
Cheddar is doing the heavy lifting on flavour. It is a high-fat aged cheese, so it delivers salt, richness and the savoury depth that comes from months of protein breakdown. That is also its weakness: eaten in quantity, melted cheddar coats the mouth and becomes monotonous quickly. Sour cream is roughly a third the fat and considerably more acidic, and a spoonful cuts through that coating and resets the palate. It is functionally the same move as a squeeze of lime on something fried.
The temperature difference is not incidental either. Sour cream that has warmed to room temperature loses most of its effect, and sour cream that has been heated will split. This is why every recipe in this family adds it at the end, off the heat, straight from the fridge, and why nachos are assembled with the cheese melted under a grill and the cream spooned on afterwards.

Can I melt sour cream into a cheese sauce?
Not directly. Sour cream has too little fat to protect its proteins, so it curdles when heated. If you want tang in a cheese sauce, stir it in off the heat at the very end, or use a spoonful of cream cheese instead, which is considerably more heat-stable.
Why is cold sour cream better than room temperature?
Because contrast is the point. The dish works on the difference between hot melted cheese and cool sharp cream, and sour cream that has warmed up simply merges into the background. Keep it in the fridge until the moment you serve, and add it as the last step.
What is the best cheddar for melting over potatoes?
Medium or sharp, grated rather than sliced. Grated cheese melts evenly and quickly under a grill or on a hot potato without needing enough heat to split it. Extra-mature cheddar has stronger flavour but releases more oil, so blend it with something younger if that bothers you.
