  1. 1"Season the 1 lb chicken breast with salt and pepper. Heat 2 tbsp olive oil in a skillet over medium-high heat and cook the chicken until golden and cooked through, about 6-7 minutes per side. Let rest, then slice."

Why this works

Put lean chicken breast and lettuce on a plate and you have two ingredients with almost no fat between them and very little flavour. That is not a criticism — it is the reason the dressing in this pairing is not a garnish but the entire flavour system, and why the enduring versions of this dish are named after their dressings rather than their contents.

A Caesar illustrates the point exactly. The dressing supplies everything the two main ingredients lack: fat from oil and egg yolk, salt and deep savoury flavour from anchovy and parmesan, acid from lemon, and pungency from garlic. Take those away and you have chicken on leaves. The croutons then supply the only crunch that lasts, since lettuce goes limp within minutes of being dressed.

The technical requirements are simple and frequently ignored. Lettuce must be bone dry — water on the leaves stops an oil-based dressing adhering and dilutes it into a puddle at the bottom of the bowl.
