Should I peel and seed the cucumber?
For tzatziki and anything creamy, yes — the seeds hold the most water and will thin your sauce. For salads and sandwich fillings, leave the skin on for colour and crunch. Either way, salt the cut cucumber for ten minutes and squeeze it dry before it goes into yogurt or mayonnaise.
How do I keep cucumber from making the dish watery?
Salt it and drain it. A teaspoon of salt tossed through sliced or grated cucumber pulls out a surprising amount of liquid in ten minutes; squeeze it in a clean towel before mixing. If you are dressing a salad, add the cucumber last and serve promptly rather than letting it sit.
Can I cook the cucumber instead of serving it raw?
