Why this works
Bread is bland, dry and structurally useful. Cured pork is salty, fatty and full of the browned, smoky compounds that develop during curing and cooking. Between them they cover almost everything a sandwich needs except acidity and crunch, which is why the classic combinations — BLT, club, plain bacon sandwich — all add a leaf and a sauce and then stop.
The most underrated part of the pairing is the fat. Cook it slowly from a cold pan so the fat renders out fully before the meat browns.

A char siu pineapple bun sets sweet, glazed roast pork against an enriched, sugary bun, using sweetness rather than acidity to balance the fat — a useful reminder that the underlying logic is contrast, not any one particular flavour.

Should I toast the bread in bacon fat?
It is one of the easiest upgrades there is. Cook the bacon, pour off most of the fat but leave a film in the pan, and toast the bread in it. You get the flavour and, more usefully, a fat-sealed surface that resists sogginess from tomato or sauce far better than plain toast.
How do I get bacon properly crisp?
Start it in a cold pan over medium-low heat. Rendering is a slow process, and a hot pan browns the meat before the fat has come out, leaving bacon that is scorched and floppy at the same time. Give it eight to ten minutes and pour off the fat as it accumulates.
