Why this works

Every dish that puts these two together is really a solution to one problem: cucumber is about 96 percent water and bread is dried starch that will absorb any of it within reach. Left alone, the sandwich is soggy in fifteen minutes.

The classic answer is a fat barrier. Softened butter or cream cheese spread edge to edge across the bread is not there for flavour so much as for waterproofing — fat does not mix with water, so cucumber juice sits on the surface instead of wicking into the crumb. This is why a tea sandwich is buttered right to the crust and why the spread goes on thicker than you would use for anything else. Salting and draining the cucumber slices first attacks the same problem from the other side, removing much of the liquid before it can do any damage.

Banh mi inverts the logic by making moisture part of the point. The cucumber is pickled rather than plain, so what leaks out is sharp and seasoned, and the baguette is a crisp-crusted, open-crumbed loaf that can take it. The bread also carries pate or mayonnaise doing the same fat-barrier job on the cut faces.

Gazpacho is the pair taken to its logical end. Here the bread is meant to absorb everything: stale crumb is blended with cucumber, tomato, oil and vinegar until it disappears entirely and leaves the soup thick and smooth. Nothing is protecting anything — the bread is the thickener.
