What Can I Make with Carrot and Cucumber?

Steps
- 1Cut carrots and daikon into thin matchsticks using a mandoline or vegetable peeler.
- 2Whisk rice vinegar, sugar, and salt in a bowl until sugar dissolves. Add carrot and daikon; toss and let sit 5 minutes.
- 3Slice baguette in half lengthwise. Gently hollow out some crumb from the top to make room for fillings.
- 4Spread mayo on both baguette halves. Layer bottom half with pickled vegetables, cilantro, jalapeño, and cucumber.
- 5Close sandwich, cut in half, and serve immediately while baguette is still crisp.
Why this works
Neither of these is a main ingredient. Both are texture and both are cold, but they are not interchangeable, and the classic dishes use them for different reasons. Carrot is dense, firm and genuinely sweet — around six percent sugar, which is high for a vegetable — so it takes a vinegar brine well and pushes back when you bite it. Cucumber is soft-fleshed, watery and cooling, and it gives out liquid rather than absorbing it.
That difference explains do chua, the Vietnamese pickle at the heart of a banh mi. The carrot is the component that gets pickled properly: its firm cell walls survive a salt-and-vinegar brine, take on the sourness, and stay crunchy for days. The cucumber in the same sandwich is usually left plain and cut into long spears, added at the last moment for freshness and coolness against rich pate and mayonnaise. Pickle the cucumber the same way and it simply goes limp.
In fresh spring rolls the two do a similar division of labour. Carrot matchsticks provide sweetness and bite through a soft rice paper wrapper; cucumber provides the wetness and clean flavour that keeps a peanut-sauce roll from feeling heavy. Gado-gado works on the same principle at plate scale, with a thick peanut dressing that needs raw crunch underneath it to stay interesting.
Japanese tsukemono goes the other way and pickles both, but briefly and lightly — a short salt cure rather than a long vinegar one, which firms the cucumber instead of destroying it.

Can I pickle carrot and cucumber together?
You can, but they want different treatments. Carrot takes a full vinegar-and-sugar brine and improves over a day or two. Cucumber goes soft in that same brine within hours, so give it a short salt cure instead, or pickle it separately and only about an hour before serving.
How should I cut them for banh mi and spring rolls?
Long, thin matchsticks for carrot so it distributes through every bite and takes brine quickly. Longer spears or ribbons for cucumber, since bigger pieces stay crisper and leak less. A julienne peeler or a coarse box grater is faster than a knife and gives more even results.
Why does my cucumber go limp in salads with carrot?
Salt or acid drawing out its water. Carrot can sit in a dressing indefinitely; cucumber cannot. Dress the carrot first, add the cucumber right before serving, and if you need to prepare ahead, keep the cucumber separate in the fridge and combine at the table.
